Formerly from St Emilion, the Lavau Family has been involved in winemaking for several generations. In 1964 they decided to settle in the Rhône Valley. 40 years later, the cellar is managed by Benoit and Frederic Lavau. The family own 3 cellars in the southern Rhône, where they are in partnership with 300 grape growers.
With their 3 cellars, the Lavau winery is vinifying most of the appellations of the southern Rhône valley, from Côtes du Ventoux to the Côtes du Rhône, and all the famous crus such as Tavel, Vacqueyras, Gigondas and Châteauneuf du Pape. The partnership established with local growers allows them to choose the best terroir and the best grapes in creating their blends.
The natural exposure of this vineyard delivers a wine with high concentration, rich and well balanced. Harvested by hand from the steep terraced hillsides of Gigondas.

55% of the wine is aged in vat, and 45% in 450L barrels previously used for 1 or 2 vintages, for a period of 12 months before blending with the vat-aged wine.
