Languedoc-Roussillon :: France
Located in the commune of Douzens (Corbières), the vines grow on argilo-limestone soil on the slopes of Mont Alaric. The temperatures are cooler and therefore grape phenolics develop well here. The estate is family-owned and run by Thierry Tastu and his wife Nelly. It covers 40 hectares and has been in his family for 5 generations.
Made from 55% Syrah (low yield of 30 hl per hectare) and 25% Grenache Noir (low yield of 35 hl per hectare), 10% Old Carignan and 10% Mourvèdre.
Two types of vinification: (1) Cold vinification for a few days to achieve a gentle extraction to preserve the quality of tannins. (2) Vinification of whole grape clusters under strict temperature control. Racking every 3 months.
