Domaine Pinson is remarkable, even in a region so steeped in history. The Pinson family has farmed in Chablis since 1640. Louis Pinson began estate bottling in 1940, thus becoming one of the first properties in Chablis to sell directly to the public. Today the domaine is run by Charlene Pinson and her father, Laurent. They own 14 hectares of top Chablis terroir, with prime holdings in 6 premier crus and the grandest cru of them all, Les Clos. They view themselves as protectors of the land, farming in a respectful and sustainable way without the use of herbicides or pesticides in the vineyards, and ploughing and working the soils to push the roots of their vines to dig deeper into the limestone bedrock. Every vineyard parcel is vinified separately. Some are fermented in tank while others are barrel-fermented. The resulting wines are characterized by an intense purity and precision.
Chardonnay. 20 year old vines. Hand-harvested.
Fermentation 90% in temperature controlled stainless steel tanks, 10% in new barriques.
On the lees in oak barriques (228 litres) for 9 months with batonnage. Barriques from 2nd, 3rd, 4th, 5th and 6th passage. Bottling 12 months after the harvest.
Fresh, complex, elegant
Citrus notes and very delicate oak influence. Excellent persistence and length.
Perfect pairing with steamed Nova Scotia lobster, seared Bay of Fundy or Maine scallops or with poultry in a creamy sauce.
