Established in Chicago in 2008, Koval Distillery is one of the leading craft distilleries in the United States. All Koval products are made in-house, grain to bottle.
Founders Robert and Sonat Birnecker chose to leave their academic careers to bring the distilling traditions of Robert’s Austrian family to America. They vowed to make organic spirits from scratch (avoiding the common industry practice of purchasing and bottling pre-made spirits) and to change the way people understand whiskey by creating a new, signature style - using only the “heart” cut of the distillate.
All Koval whiskies are “single barrel” expressions and aged in 30 gallon charred barrels. This ensures that the distillate, made up solely of the heart cut, develops its flavour with the purest grain notes. With numbered bottles, all Koval spirits can be traced back to their barrel.
Embracing the grain-to-bottle mentality, Koval thoughtfully monitors each step of the spirit-making process.
GRAINS: All Koval whiskeys are “heart cut,” meaning only the purest and best tasting part of the distillate is used. All enzymes and yeast used in production are also organic and non-GMO.
WATER: water, an essential ingredient in distillation, is sourced from Lake Michigan using a natural charcoal purification method.
BARRELS: 30-gallon premium Northern American Oak whiskey barrels from Minnesota, sealed with organic beeswax. 2–4 year maturation.
